The goal of VEGANX is to show my community that adding more plant-based foods to their diet does not equal giving up our cultura or the dishes we grew up loving—and it’s also to share that cultura through food with others. Making VEGANX an inclusive space for everyone has always been a top priority. I never want to make anyone feel like I’m pushing veganism onto them or judging their lifestyles. I simply want to share a bit of mine with you (using food as a form of activism). VEGANX is small business building its way from the ground up; everything wonderful takes time.
Mushroom Asada Tacos
8oz of bella mushroom, diced
½ tbsp of veggie or olive oil
1 ½ tbsp liquid smoke
1 tbsp liquid amino (or soy sauce)
1 tsp onion powder
1 tsp paprika
3-4 garlic cloves, minced
¼ of a white onion, sliced
2 serrano peppers, sliced and seeded (optional)
2-3 of your favorite tortillas (I use El Milagro brand)
Onion, diced
Cilantro, chopped
Avocado
Lime
Salsa
5 Small Tomatillos
3 green jalapeños
¼ white onion
3-4 garlic cloves
Chunk of cilantro
Salt to taste
Water to boil
